Yummy Brie & Pear Flatbread



One of my favorite places to eat out in Columbus is The Wine Bistro, on Lane Ave, Upper Arlington.  They have quite an extensive wine cellar, but I really love it because the restaurant has a strong European atmosphere, and the food, although simple and uncomplicated is truly delicious.  One of my favorites on their menu is "The Juliette", a pear and brie flat-bread.
I decided to try and make it myself, and came up with this recipe, it couldn't be easier or quicker, if you want something different and delicious and on the table in about 30 minutes this is it:


Pear and Brie Flatbread

4 Flatbread or Pizza bases
2 Bartlett Pears, sliced about 1/4" thick, core removed
1 medium yellow onion, sliced
8oz wedge of Brie sliced thinly.
2 baby pimento peppers (found in the olive bar at the supermarket)  sliced into thin strips
1/4 tsp cinnamon
1/4 stick unsalted butter
1 tsp olive oil
Freshly ground black pepper

Preheat the oven to 400 degrees

Place the flatbreads on a greased baking tray and brush lightly with the olive oil,
Heat the butter in a saute pan and cook the onions for about 10 -15 minutes over a medium heat until soft and translucent, spread the onions over the flatbreads,
lay the brie slices over the onions,
sprinkle the pimento pepper slices over the brie,
sprinkle the cinnamon and black pepper over the brie,
lay the pear slices over the top and lightly sprinkle with the rest of the olive oil.
Bake on the top shelf of the oven for 15 minutes
Serve immediately with a green salad.
